Violet flavoured caramel spiral

INGREDIENTS

600gr Isomalt Sosa
250gr Glucose Sosa
250gr water
q/s powdered violet colouring Sosa
10 drops of violet aroma Sosa
40gr butter

ELABORATION

Mix Isomalt with glucose and water and reduce to 170ºC.
Take off stove and add in water diluted colouring, aroma and butter.
Mix all together.
Temper the caramel and take up with hand whisk.
Put on drill with round anti-adherent accessory and incorporate caramel while drilling.
Let cool down and take off the caramel spiral from drill.
